The flavor of the start of summer. Kudzu has long been known as an effective herbal medicine for the gastrointestinal tract, and is the perfect food for a weakened body in the summer.

Kuzumanju is a cool summer confection, made by wrapping strained bean paste in Kumagawa kudzu from Kaminakacho, which was highly praised by the Edo Era Confucian scholar Rai San'yo as possessing "quality which is a match for the kudzu of Yoshino".

Kudzu, worked until it becomes transparent, is placed in a cup, wrapped around the bean paste, and chilled. You too can enjoy the jiggly texture and lightly sweetened taste.
